1 egg beaten
1/4 cup finely grated pecorino
1/4 cup almond flour
2 cups finely grated zucchini
a little cracked black pepper


Squeeze the water out the grated zucchini with paper towels. Keep changing the paper towels until most of the water has been removed. Put all the ingredients into a glass bowl and mix well. Line a baking sheet with a good quality silicone mat and empty the mixture onto it. Using a spatula, spread the mixture to form a round pizza shape starting from the inside out. Tidy up the edges with the spatula. Bake on 200° C for 20 minutes and the edges just begin to brown. Remove from the oven. Spread on some pizza sauce, grated mozzarella and toppings of your choice. Finish by sprinkling some oregano over the top. Bake until the mozzarella starts bubbling.
