1 punnet mushrooms
cracked black pepper
kosher salt
olive oil
fresh thyme sprigs
60ml white wine
fresh finely grated parmigiana cheese
minced garlic


Wipe the mushrooms clean and quarter them. Add butter and olive oil to a frying pan. Add the mushrooms and mix to coat. Leave them to brown. Turn the heat to low and add the garlic, thyme, pepper and salt. Cook for a few minutes. Add the wine and deglaze the pan until the wine has cooked away. Remove the pan from the plate and sprinkle the parmigiana over the mushrooms. Mix.
