1 can coconut milk
2 cups fresh strawberries
sweetner of choice i.e. xylitol, erythritol or stevia
Put all the ingredients into a saucepan and whisk on a low heat for a few minutes. Transfer to a jug and chill for at least one hour preferably two. If you have an icecream machine, churn the mixture to make the icecream. If not, once you have blended the mixture you can transfer it to a container with a lid and put it in the freezer. Churning is always a good idea as it definately does something to the texture of the icecream.
