100ml ground sunflower seeds
100ml coconut flour
50ml almond flour
1 tsp salt
2 heaped tsp baking powder
60ml psyllium husk
1 cup of mixed seeds
1 cup double cream yogurt or buttermilk
Pre-heat oven to 180°C. Beat/whisk eggs and yogurt until frothy. You can use an electric mixer too. Put all the dry ingredients in a bowl and mix well. Add the egg mixture and mix until well combined.
Put into a well greased bread pan and decorate with seeds of choice e.g. pumpkin, poppy, etc. or a mixture. Bake for 55 minutes. Remove from the oven and allow to cool slightly then remove the loaf from the tin onto a bread board to cool completely. Once cooled, wrap the bread in tin foil and store it in the fridge. This is the best bread you will ever taste.
