INGREDIENTS
½ cup fresh salmon finely diced
a little cucumber peeled and finely diced
½ spring onion finely diced
Himalayan salt
cracked black pepper
1 tsp dried dill or fresh
1 tbls fresh lemon juice
1 ripe avocado
microgreens for garnishing
METHOD
Scoop the avo into a glass bowl. Mash the avo with a fork. Add the lemon juice, cucumber, spring onion, salt and pepper. Mix well. In a seperate bowl, mix the salmon with the dill, a little salt and pepper. Place a food ring on a plate. Starting with the avo, place a layer in the ring and tap down gently with the back of a teaspoon. Now add a layer of salmon and tap down gently again finishing with a layer of avo. Remove the food ring gently and top with some microgreens. Enjoy with a few seeded crackers or as is.
