½ cup steamed mashed pumpkin
1 heaped tbls pumpkin pie spice
1½ cups almond flour
½ cup erythritol icing
4 eggs
a squirt of liquid stevia
1 tsp vanilla paste
2 tsps cinnamon powder


Mix dry ingredients together. Add the rest of the ingredients and beat with an electric beater until well mixed. Spoon mixture evenly into well greased muffin moulds and bake on 170° C for 40 minutes or until cooked. Top with a cream cheese frosting once the muffins have cooled completely. Sprinkle with a little chopped pecans too if desired. Store in a container in the fridge. Heat slightly prior to eating.
