INGREDIENTS
2 eggs
60g cream cheese
METHOD
Soften the cream cheese slightly in the microwave. Add the eggs and beat with a whisk until well blended. Using a pancake pan, spray with Spray ‘n Cook and add a little butter. Melt on a medium heat. Add some mixture to the pan swirling to make sure the pan is covered. Let the pancake set properly and is slightly brown before turning with a spatula to brown the other side. This mixture makes 2 pancakes.
NOTES
Serve with any fillings of choice. There are so many.
