INGREDIENTS
500g pork mince500g beef mince
1 tbls dry garlic powder
1 tsp cumin powder
1 tsps smoked paprika
2 tsps ground coriander
1 tsp salt
2 tsps cayenne pepper
2 tbls olive oil
125ml almond flour
2 eggs
a few blocks of mozzarella cheese
METHOD
Using your hands, mix all the ingredients together excepting the mozzarella. Dampen your hands with water and begin to form the meatballs. This will prevent the mince from sticking to your hands. Place the meatballs on a greased oven proof tray. Make a hole in the middle of the meatball with your finger placing the little block of mozzarella in the hole and cover by rolling the meatball between your hands. Bake at 200° for 20 minutes or until the meatballs are cooked.
NOTES
For the avo dip I mashed a few avos. Added a little lemon juice, salt, ground black pepper and chilli flakes. Serve the meatballs with any dip or sauce of your choice. Halve the mixture to make less meatballs. They keep well in the fridge and make a delicious light meal.
