INGREDIENTS
500g beef mince
1 onion cut into pieces
carrot batons/ 1 medium carrot
celery stalks cut into pieces
fresh minced garlic
2 tbls healthy vegetable stock powder
70g tomato paste
a little water
olive oil for frying
cracked black pepper
1 cup sweet potato diced
2 tsps dried thyme
2 tsps dried parsley
3 tsp dried oregano
2 eggs beaten
fathead dough
METHOD
Put the carrots, onion and celery into a food processor and process until fairly fine. Sauté in olive oil. Add the garlic, pepper, herbs and vegetable stock powder. Mix. Add the mince and when it has changed colour, use a masher to make it fine. Add the tomato paste, diced sweet potato and a little water. Cook until the potato is tender, the mince cooked and there is no excess liquid. Remove from stove and add the two beaten eggs. Mix well. Make the fathead dough. Roll out into an oblong shape. Put mince on the one side and fold the other side over the mince and pinch to seal the dough. Brush with egg wash and bake on 200° C until golden brown. Slice and serve with a side salad.
