INGREDIENTS

1 cup warm water
1 tsp sugar
1 pkt (10g) dry yeast
2 large eggs room temperature slightly beaten 

pinch salt
⅔
 cup golden flax seeds milled to powder, golden flax powder or almond flour (if you do not like the flaxseed taste)
½ cup oat fiber
1¼ cups vital wheat gluten flour
70g butter melted and cooled slightly
½ tsp xanthan gum

METHOD

Stir the yeast, sugar and warm water together to activate. Leave for 15 minutes to activate properly. Add all the dry ingredients to the mixer bowl, salt first. If you do not add the salt first it will kill the yeast. Add butter, eggs and yeast. Mix with dough hooks for at least 8 minutes until the dough comes together. Remove and knead by hand for another minute or two. Push out to length of bread pan. Make an oblong shape. Fold to middle and fold over again. Place in greased bread pan seam face down. Proof in an oven on 50° for one hour. Remove from oven and heat the oven to 170°. Bake bread for 45 minutes. Place on wire rack to cool. The same dough can be used for bread rolls.
