Makes 8 servings

200ml coconut flour
2 tbls psyllium husk powder
1 tsp baking powder
1/2 tsp salt
1/3 cup (80ml) unflavored coconut oil
2 cups boiling water
butter for frying
Kerrygold garlic and parsley butter


Mix all the dry ingredients in a bowl. Add the oil and the boiling water and stir well. Now use your hands and knead the dough well. The dough will turn firm fairly quickly, but stay flexible. It should resemble the consistency of play dough. Divide into 8 pieces and flatten with your hand on a silicon mat. Fry in a little butter on both sides in a frying pan until they are golden brown. As you remove the flatbread onto a plate, spread them with Kerrygold garlic and parsley butter and a sprinkle of salt flakes.
