INGREDIENTS

100g feta cheese
½ cup double cream plain yogurt
80ml olive oil
3 tbls fresh lemon juice
3 – 4 roasted garlic cloves minced
1 tbls paprika
1 tsp cracked black pepper
½ tsp cayenne pepper
1 tsp sweetener of choice

METHOD

Use good quality feta. The Fairview or Woolworths 100g block is really good. Wash the feta, dry with a paper towel and cut it into blocks. Place all the ingredients in a food processor and pulse until smooth. Serve with crudités of choice or homemade seed biscuits. Store in a glass bowl in the fridge until ready to use. This dip must be used the same day or it will go runny.
