INGREDIENTS
sliced cooked boerewors
½ finely chopped onion
fresh chopped garlic
fresh ginger
2 tbls curry powder
2 tsp turmeric
½ tsp cumin powder
½ tsp coriander powder
salt and cracked black pepper
olive oil
fresh tomatoes or 1 tin tomatoes blended
tomato paste if using fresh tomatoes
a little sweetener
METHOD
Fry the onion, ginger and garlic in olive oil. Add all the spices, sweetener, salt and pepper and sauté a little longer. Add the tomatoes and the paste if using. Cook for a few minutes. Add sliced boerewors pieces. Mix well and simmer for 15 minutes.
