INGREDIENTS

500g cream cheese
½ tsp vanilla extract
2 eggs
1/3 cup xylitol or sweetner of choice

METHOD

Soften cream cheese slightly in the microwave. Add the rest of the ingredients and beat with an electric mixer until well blended. Transfer to a small greased oven proof dish and bake at 175° C for 40 minutes or until firm. Top with your favourite topping. Homemade lemon curd is a great topping
