INGREDIENTS

1/3 cup pecorino cheese
180g cream cheese
6 eggs
11/2 tbls coconut flour

METHOD

Soften the cream cheese in the microwave for a few seconds. Add all the ingredients to a blender and blend well. Spray a pancake pan or similar size pan with Spray ‘n Cook. On a medium heat, add a little blob of butter and when melted, swirl it to cover the base. Pour some batter into the middle of the pan and swirl again making sure the base of the pan is covered properly. Allow to cook for a few minutes until golden brown. Turn the crêpe with a spatula to brown the other side. Remove and top with fillings of choice. Roll up and enjoy.
