2 x chicken breast fillets
2 oblong blocks gruyere cheese
4 slices shaved ham
1 cup almond flour
1 egg beaten
2 tsps garlic powder
1/2 tsp Himalayan salt
2 tsps spicey chilli seasoning
olive oil for frying


Mallet the chicken fillets to size between two pieces of cling film. Not too thin. Lay two slices of ham on top of each fillet. Place a piece of cheese in the middle of each one. Tuck each side over and begin rolling the chicken up. Squeeze slightly. Using your hands dip the chicken in the beaten egg and then coat it in the almond flour all over which has been seasoned with the spice, salt and garlic powder. Fry on a medium heat in shallow olive oil in a good quality non stick frying pan on both sides until golden brown. Serve with a cheese sauce and sides of choice.
