INGREDIENTS
5 cooked skinless chicken thighs deboned and shredded
300g steamed fresh broccoli cut into bite size pieces
1 cup homemade mayonnaise
1 x 250ml tub sour cream
250g cream cheese softened
2 tsps onion salt
1 tsp cracked black pepper
1 tsp dried thyme
3 tsps smoked paprika
1 tsp dried basil
1 tsp crushed garlic powder
1 cup grated cheddar cheese
METHOD
Whisk the cream cheese, sour cream and mayonnaise together. Add the rest of the ingredients except the grated cheese. Place in a greased oven proof dish and even out. Sprinkle with cheese and bake on 200° C until the sides start bubbling. Turn on the grill and brown cheese slightly. Remove from the oven and serve. For a dairy free option, leave out all the cheeses and add a tin of coconut milk beaten together with two eggs and bake until set.
