INGREDIENTS
140g cream cheese
1 tsp cayenne pepper
½ tsp Himilayan salt
¼ cup coconut flour
⅔ cup almond flour
1½ tsps baking powder
3 tbls water
5 eggs
¾ cup finely grated cheddar cheese
METHOD
Place the cream cheese in a glass mixing bowl and microwave for a few seconds to soften. Add the rest of the ingredients excepting for the cheese. Mix well with an electric mixer until smooth. Stir in the cheese. Grease a muffin pan well and fill each mould three quarters with the mixture. Sprinkle a little grated cheese on top of each muffin. Bake on 200° C for 20 minutes. Makes 12 muffins.
