INGREDIENTS

3 tbls almond flour
1 tbls coconut flour
1 tsp baking powder
a pinch of Himalayan salt
1 tbls erythritol
1 tbls melted unsalted butter
1 free range egg
½ ripe banana
1 tsp vanilla extract

CARAMEL SAUCE

1 tbls butter
3 tbls cream
½ tbls erythritol
½ tsp vanilla extract

METHOD

Mix the dry ingredients together in a glass bowl. Add the wet ingredients and mix well using the back of a spoon. Make sure the batter is smooth. Grease a large ramikin, two small ones or two cups well. Spoon the mixture into the container of choice and microwave for between 50 and 90 seconds until the pud is cooked. Keep checking on it while it’s cooking as it rises a lot during cooking and will spill over. Just open the microwave door, wait a few minutes and continue cooking.

FOR THE SAUCE

Mix all the ingredients together in a mug and microwave for 60 seconds. Turn the pud over into a dessert bowl and pour the sauce over.
