INGREDIENTS
6 chicken thighs/pieces
1 onion chopped
olive oil for frying
2 garlic cloves minced
2 tsps fresh grated ginger
10 ml tumeric
5 ml cumin
5 ml ground coriander
3 cardamom seeds
2 cinnamon sticks
5 ml chilli powder
4 whole cloves
salt and ground black pepper to taste
1 can whole tomatoes liquidized
1 cup filtered water
½ tsp stevia powder
sweet potato/pumpkin cubes
METHOD
Brown chicken in olive in a pressure cooker. Remove the chicken to a plate. Sauté onions, garlic, ginger and all the spices, salt and pepper and stevia in a little more olive oil. Add the chicken back and stir well. Add the tomatoes and the water. Stir and pressure cook for 30 minutes. Add sweet potato and/or pumpkin cubes. Pressure cook for a further 10 minutes. Serve with lowcarb rotis.
