INGREDIENTS
3 chicken fillets
Cajun spice
Himilayan salt
olive oil
butter
ground black pepper
julienne carrots
1 large green pepper sliced julienne
purple cabbage shredded
baby narrows julienned
red onion sliced thinly
METHOD
Cut the chicken fillets into bite size pieces. Sprinkle with Cajun spice and pour some olive oil over the chicken in a bowl. Mix well. Prepare the vegetables to stir fry. Put a little olive oil and butter in a wok and heat up on a medium to high heat. Add the chicken and cook. Remove the chicken from the wok and add a little more olive oil and butter. Add all the vegetables. Cook until just tender but still a little crispy. Add salt and ground black pepper. Add chicken back to wok. Mix well and serve.
NOTES
Feel free to add your own spices. Don’t over cook the vegetables. They cook very quickly in a wok. You decide on the quantities of the vegetables. Add more chicken if you want to.
