FOR THE FILLING

3 cups frozen blueberries
xylitol to taste
2 tbls vanilla essence

FOR THE TOPPING

1 cup almond flour
2 tsps xylitol
3 tbls melted butter

METHOD

Put the frozen berries into a saucepan and heat up quickly. Add the xylitol and vanilla essence. Don’t make it two sweet. I only added 2 tablespoons of xylitol. It was more than enough. Turn the heat down to a medium to high heat stirring frequently. Reduce the liquid until it is nice and saucy and thickish. In the meantime, put all the topping ingredients in a bowl and mix well. Put the topping into the fridge for at least 45 minutes. When the berries are ready, put them into a greased oven proof dish and let them cool slightly. Remove the topping from the fridge and gratecit evenly over the berries. Bake on 220°C until the topping is golden brown. Serve with a dollop of fresh thick cream or a scoop of homemade Banting vanilla ice cream.
