butter for frying
1 kg beef short ribs cut into pieces
Himalayan salt to taste
ground black pepper to taste
1 large onion cut into half and sliced
3 carrots peeled and cut into thick rounds
a few sprigs of fresh thyme
4 cloves garlic coarsely chopped
1 can diced tomatoes liquidized
1 cup Carbsmart barbeque sauce
1 cup homemade beef broth


Brown and seal meat in a little olive oil and butter and then transfer to a slow cooker. Sauté onions, carrots and garlic. Add the thyme, salt and pepper. Add the tomatoes, broth and barbecue sauce. Stir well and bring mixture to the boil. Pour mixture over the meat and stir. Cook on low for approximately three hours or until the meat is tender.
