INGREDIENTS
300g cauliflower florets
½ cup mozzarella
½ cup Parmesan
1 large egg
1 tbls fresh crushed garlic
½ tbls dried basil
½ tbls dried parsley
1 tsp salt
½ tsp ground black pepper
¾ cup grated mozzarella
METHOD
Place the cauliflower into a food processor until it turns to caulirice. In a large glass bowl, mix all the ingredients together well excepting the ¾ grated mozzarella. Place the mixture onto a silicone mat on a baking sheet and spread to form a rectangle. Bake at 200° C for 15 – 20 minutes until the edges just begin to brown. Remove from the oven and sprinkle the breadsticks with the ¾ cup of mozzarella.. Return to the oven. As the cheese starts bubbling, turn on the grill and brown slightly. Remove the breadsticks from the oven and allow to cool slightly. Use a pizza cutter to cut the breadsticks. Serve with your favourite dipping sauce.
