ZUCCHINI BREAD

INGREDIENTS

3 zucchini’s grated
80ml sunflower flour
180ml almond flour
2 tsps baking powder
1 tsp Herbamare/Himalayan salt
chilli flakes (optional)
paprika (optional)
4 eggs
2 tbls melted butter
80ml finely grated cheddar cheese

METHOD

Excepting for the cheese and zucchini, add all the ingredients to a food processor and blend. Add the zucchini and cheese and pulse until well combined. Transfer the mixture to a greased loaf tin and bake on 200° C for 30 minutes. Check the bread to make sure it is cooked before removing it from the oven. If you don’t have sunflower flour add an extra 80ml of almond flour.
