INGREDIENTS

140g cream cheese
1 tsp cayenne pepper
1/2 tsp Himilayan salt
1/4 cup coconut flour
2/3 cup almond flour
11/2 tsps baking powder
3 tbls water
5 eggs
3 slices ham finely chopped
3/4 cup finely grated cheddar cheese

METHOD

Place the cream cheese in a glass mixing bowl and microwave for a few seconds to soften. Add the rest of the ingredients excepting for the ham and cheese. Mix well with an electric mixer. Stir in the ham and the cheese reserving some cheese for sprinkling. Grease a muffin pan and fill each mould three quarters with the mixture. Sprinkle the remaining cheese on top of each muffin. Bake on 200° C for 20 minutes. Makes 12 muffins.
