CHICKEN CURRY 2

INGREDIENTS

6 chicken thighs and drumsticks
1 onion chopped
olive oil for frying
2 tsps garlic
2 tsps fresh grated ginger
10 ml tumeric
10 ml cumin
10 ml ground coriander
5 cardamom seeds
2 cinnamon sticks
5 ml chilli powder
5 whole cloves
salt and ground black pepper to taste
1 can whole tomatoes liquidized
a little water
½ tsp stevia powder

METHOD

Brown chicken in olive in a pressure cooker. Remove the chicken to a plate. Sauté onions, garlic, ginger and all the spices, salt and pepper and stevia in a little more olive oil. Add the chicken back and stir well. Add the tomatoes and a little water. Stir and pressure cook for 40 minutes. Serve with lowcarb rotis. Recipe on my website.
