BOLOGNAISE SAUCE

INGREDIENTS

500g beef mince
500g pork mince
1 onion finely chopped
crushed fresh garlic
fresh thyme sprigs
Italian herbs
salt
cracked black pepper
olive oil
homemade napoletana sauce
2 bay leaves

METHOD

Sauté the onions and garlic in olive oil. Add the mince and break up. When the mince changes colour use a masher to make the mince fine. Add the rest of the ingredients except for the napoletana sauce. Sauté for a few minutes. Add enough napoletana sauce for a nice saucy mince and mix well. Simmer for 25 minutes until the mince is cooked. Remove the thyme sprigs and bay leaves.
